Domaine Tupinier-Bautista, Touches, Mercurey
Background
Since 1770 the Tupiniers have cultivated vines in Mercurey.The caves where the wines are now aged were carved into the rock in the 17th century. Since 1997 Spanish born Manu Bautista has succeeded his father in law Jacques Tupinier as winemaker. Chris discovered Manu Bautista at the 2008 Grand Jours de Bourgogne an 'open week' held every March.

Viticultural and vinification methods
The harvest is manual and the winemaking methods traditional.The wines are aged in oak barrels in the 17th century cellar cut into the rock.
