Viticultural and vinification methods
No fertilisers are used and a green harvest takes place in summer to limit yields.
A manual harvest, 99% de-stemming and fermentation over 10-12 days with regular pumping over. The village wines are aged 16-18 months on oak - of which 20% is new.
The Corton undergoes a slow fermentation.
