Domaine Talmard, Uchizy

Background
Mallory and Benjamin Talmard. The village of Uchizy is situated 10km south of Tournus and 25km north of the Macon hills. The Talmard family produce just one cuvée of Mâcon each year- one of the most delicious fruit driven and moreish Chardonnays in our list. Previously named Mâcon Farges but this village was declassified. The utilisation of several clones guarantees a good diversity of wine

Viticultural and vinification methods
The grapes are harvested at a ripeness so it is unnecessary to chaptalise. The harvest is mechanical and the grapes are transported swiftly to the cellar to avoid oxidation. The must is gently collected using a pneumatic press and a gravity system is in place to ensure the utmost care is given. After a light use of sulphur the must is fermented in tank under a controlled temperature. Once malolactic fermentation has taken place the wines are separated from the lees, clarified and bottled.
