Domaine Hubert Lamy, Saint Aubin
Background
This domaine was founded by Hubert Lamy in 1973. Originally it was just 8 hectares in size, and much of the development of the domaine took place in the 1990’s, with the buying, renting and planting of more vines. Some of the parcels that had originally been planted with pinot noir, were re-planted with Chardonnay, as they believed that this varietal was better suited to the soil type.
Hubert’s son Olivier joined his father in 1995, having worked at various other domaines, as well tasting wines from all over the world. As a resut of this experience, Olivier was able to project new ideas and new methods in both the vineyard and the cellar.
Size: 17 hectares (¾ Chardonnay, ¼ Pinot Noir) covering 18 appellations, in Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet, and Santenay.

Viticultural and vinification methods
Already using organic methods, the domaine is in the process of converting to biodynamic viticulture. Olivier, like so many of his young peers, abhors wood flavour in his wines, but likes the gentle oxidation that fine oak brings to the wine. His solution has been to switch from the Burgundian 225 litre ‘fut’ to the 600 litre ‘demi muid', (which originated in the Rhône valley). The greater mass of wine means that new wood can be employed without too much flavour and tannin being leached out into the wine. Bottling takes place after approximately 15 months ageing in barrel.
