Domaine Géantet-Pansiot (Vincent Géantet), Gevrey-Chambertin
Background Vincent is a fourth generation wine maker and local fire chief! The vineyard was started in 1954 by Vincent's parents and he joined them in 1977. In 2006 Vincent's son Fabien came on board and they now run the domaine together.

Viticultural and vinification methods Vincent uses no weedkillers or fertilizers. The harvest is done manually and then grapes are sorted 3 times including a vibrating table with LED to weed out any unfit specimens. A cold maceration takes place for 10 days then warmed for fermentation to start. The grapes are uncrushed at this point - Vincent believes initial fermentation should be intracellular to preserve fruit flavour. 30% of new oak is used on every cuvée. No fining or filtration
