Étienne Sauzet, Puligny-Montrachet
Background
Étienne Sauzet died in 1975 and the estate (although divided amongst his 3 grandchildren) fell into the capable hands of Gérard Boudot (right) who had married Jeanine Boillot (Etienne's granddaughter). In 1990 Jean Marc Boillot took over his share leaving the remaining 8ha in Gérard's care. He has now been joined in the cellar by his daughter Emilie and son-in-law, the very able Benoît Riffault.

Viticultural and vinification methods
The estate follows organic practises and has been converting to biodynamics since 2010.
Harvesting is done manually and grapes pressed in a pneumatic press. Fermentation takes place in temperature controlled cellars using selected yeasts. The wine is left on its lees as long as possible. Wines are matured in barrels of roughly 25-50% new oak and bottled after a year and a half.
